What do you care most? There are different piano vsts targeting completely different user bases.
There are vsts focusing on being as close to a real concert grand as possible, like the VSL pianos or CFX Garritan. They sound really nice and are great if you want to play some serious classical repertories. But they are not really great option if you don't do solo classical.
There are vsts focusing on being as tweakable as possible, like Pianoteq. It is possible to tune your piano sound 100% to your liking. But won't do you much good if you want specifically an 1884 Steinway model D.
There are vsts which do not sound that real or get that playable. But they still sound pretty good and can easily sit in your mix. Most of the NI pianos like Noire and Grandeur fall in this range.
And there is a whole list of vsts all about character pianos. They sound very different and can do different things.
